The European sprat or whitebait (Sprattus sprattus), is a small forage fish member of the herring family, a subgroup of the larger Clupeidae family. A mainly European fish, it can easily be found in UK waters, even in-shores, thanks to its ability to survive in low salinity waters. It can however also be fished anywhere from the Baltic Sea to the north, the African coast to the south and the Black Sea to the east.
Similar to sardines and anchovies, the European sprat is a very oily fish with a pink creamy flesh. Broiled, fried, breaded, grilled, smoked, baked, marinated, you can cook it most ways you can think of, so go creative!
