The Merlangius merlangus, whiting or merling, is a benthopelagic fish member of the Gadidaean family. Although native to the northeast of the Atlantic Ocean, it is commonly found commonly in the Mediterranean, western Baltic, and Black Sea.
Similar to cod, it makes for a great substitute. The Whiting is a low-fat fish with a tender and firm white meat. Easily overcooked, you can bake it, fry it, steam it and broil it too.
We get our product from our friends at A.A.Lyons Fishmerchants in Billingsgate Market. The product is of high quality and is often found defrosted and sold in fishmongers across London.
